Woggy has declared the salsa Very Tasty. Here is the recipe! This is the ball blue book "zesty" salsa (except I had garlic salt, not garlic, and I don't like cilantro). It is a LOT of chopping.
10 cups tomatoes, skinned and chopped
5 cups onions
5 cups bell peppers
2.5 cups other peppers (vary the kind based on how spicy you like it. I did half jalapenos, half anaheims. It is just on the upper end of my spicy tollerance, but not bland enough that woggy calls it boring)
3 cups vinegar (5% acidity)
1 Tbs garlic salt
Combine, boil ~10 min to tenderize veggies. Fill jars w/ 1/2" headspace. Boiling-water can for 20 min. Makes 9 pints!
(Ball says it makes 6 pints... I'm not sure where they got that number from!)
A double batch of this does not quite fit in a 2 gallon pot. Especially if you want to STIR. Which is required.
