Blonde Chili

2 lbs/4 cups diced chicken (or dismantle a rotisserie chicken)
1 sliced onion
2 sliced bell peppers
Small (like 6oz) can of jalapenos that has been sitting in the pantry forever
1 qt chicken broth (from said chicken)
2 cans corn, drained
2 cans white beans (random pantry cans said "cannelloni" I think)
1-2T taco seasoning (cumin, salt, chilli powder, onion powder, garlic, thyme is what I used)
Stir to combine
Instapot all together for like 15 min, but slow cooking would have been better (and not as liquidy as mine)
Add 1 brick cream cheese (8oz)
Stir to melt/combine
Decide it's still awful watery, add 2T cornstarch to 1/2 cup cold water, vigorously combine then stir into soup.
